Green Goddess Soup With Garlic Bread And Cheese Croutons

John and Lisa have a green theme in their weekend kitchen today.  They start the day with Lisa’s green goddess soup with garlic bread croutons which is packed with all things healthy. 

Green Goddess Soup With Garlic Bread And Cheese Croutons

Serves 4

Ingredients

  • Olive Oil 

  • 1 Onion, Chopped

  • 1 Clove Garlic, Smashed

  • 2-3 Leeks, Sliced

  • 3 Sticks Celery, Sliced

  • 1 X 400g Tin White Beans Like Haricot Plus Half Of The Liquid From The Tin

  • 300g Seasonal Greens Like Kale, Spinach, Chard, Stalks Removed And Roughly Chopped

  • A Large Handful Of Frozen Peas

  • 1 Bouquet Garni

  • 1-1.5l Vegetable Stock

  • Salt And Pepper

  • 1 Lemon 

  • A Handful Of Flat-Leaf , Chopped  

  • A Shop Bought Garlic Bread Baguette 

  • Parmesan Or Gruyere Cheese, For Grating

Method

1. Place The Onion In A Heavy Based Casserole Dish Or Deep Frying Pan With A Drizzle Of Olive Oil And Start To Soften. Add The Garlic. If It Starts To Stick, Add A Splash Of Stock.

2. Add The Leeks And Celery, Season With Salt And Pepper And Let Cook For About 8-10 Minutes Until Soft. Add The Bouquet Garni, The Beans And The Stock. Bring To The Boil Then Continue To Simmer On A Medium-High Heat For Around 20 Minutes Until The Stock Has Reduced To A Stew-Like Consistency. 

3. When Your Soup Is Almost Ready, Slice Up The Garlic Bread, Grate Over Cheese And Cook The Garlic Bread According To Packet Instructions.  Add The Greens And Peas To The Soup And Continue To Simmer Until Cooked Through.  Remove Garlic Bread From The Oven And Finish With Another Grating Of Cheese. 

4. Remove The Bouquet Garni From The Soup. Add Some Lemon Zest And Stir Through, Ladle The Soup Into Bowls And Top With The Cheesy Garlic Bread, A Drizzle Of Olive Oil, A Squeeze Of Lemon And A Sprinkle Of .
