Smothered w/ Bacon, Avocado & Homemade Sauce

I love homemade sauce, and I love , so here they are combined. First time making this, but will definitely come back to this one in the future, maybe even with a couple tweaks.

Ingredients/Cost:
4 slices bread: $1.80
4 strips bacon: $4.00 @butcherboymarket
1.5 cups shredded cheddar: $4.30 @sargentocheese
1/2 tomato: $0.75
1/2 avocado: $1.50
3 tbsp butter: $0.55 @cabotcheese
1.5 cups milk: $0.45
2 tbsp mayo: $0.30 @hellmannsmayonnaise
2 tbsp sriracha: $0.45
3 tbsp flour: $0.10
Salt & pepper: $0.10

Total cost = $14.30 or $7.15 per serving

Directions (est. time ~30 minutes, serves 2)

1. To make the sauce, put 1.5 cups milk in a pot over medium-low heat. Heat until it just starts to steam/bubble (but not boil), ~3-5 minutes. Pour warmed milk into separate container and set aside. Add 2 tbsp butter to the same pot used to warm the milk. When butter is melted and starting to bubble, add 3 tbsp flour and whisk until combined. Cook, whisking occasionally, for ~2-3 minutes and then add back in the warmed milk. Switch stove to low heat and whisk everything together constantly for ~1 minute…you will notice it start to thicken. Add ~1 cup shredded , whisk constantly for ~30 seconds and then turn off heat. Keep whisking occasionally as you make the rest of the meal.

2. Layer the bread with the rest of the shredded cheese, then bacon, avocado & tomato. Spread ~1/2 tbsp mayo on the top of each sandwich. Put a pan on the stove over medium-low heat and melt 1 tbsp butter. Place each sandwich, mayo side down, into the pan and cook until browned. As it cooks, spread remaining mayo on the other side of each sandwich. Flip and cook the other side until browned.

3. To serve, cut sandwich in half and drizzle with cheese sauce, then drizzle with sriracha.
