You guys made me laugh quite a bit all Right right with the uh people love the Uh we’ve been missing Tim yes yes uh Yeah so thank you for everyone who’s Commented we really appreciate you have You ever heard of cooking with plants Right we have that’s on your over Cooking with plants we’ve made a few of Our the cauliflower cheese sauce Is from her uh she’s out of Australia Yes and we absolutely love her I’ve Watched her for a long time she’s one of The first people I ever watch she has a Lot of I’m going to tell you a Funny story that involves Nene later on But uh we decided we would go in a Super Bowl party and we were going to make two Of her cheese wheels her blocks cheese Blocks or Wheels right uh and put them On a charcuterie board and bring a Denise house bernini’s Super Bowl party That she has everything yeah right we Have not made cheese before what she Sucks we do yeah we haven’t made a block But not a mold of cheese you know so we Went with uh we went plants because She’s done it before we’ve TR we’ve Gotten great things from her before so Anyway that’s what so we’re gonna share That experience Um and what we would do differently so We’re gonna show you here’s what we’re Showing in this video coming up right Here uh it was Super Bowl weekend which

Was a month ago right we were headed to NeNe’s House we made the stuff the day Before and then just brought the that we Made And we just brought them with us uh over There right and everything went we’re Gonna show you the two cheeses how we Made it their onions recipes we’ll put a I’m not gonna put a link on our website To the recipe I’m just gonna put a link To her recipe because she has them Already and uh we’re gonna make we’re Gonna show you how we style the Chocolate anymore right Um just kind of a simple way to put it Together Um and hopefully it’ll give you some Ideas so let’s check that out [Music] We’re going to make cooking with plants Is herb and garlic almond cheese to Start with we’re going to need a high Speed blender and to that we’re going to Add one and a half cups of plant milk we Are using a planted oat for this milk Next it’s one half a cup of blanched Almonds and then it’s one tablespoon of Lemon juice one half a teaspoon of white Pepper two teaspoons of sea salt or Himalayan salt two large garlic cloves a Tablespoon of mixed herbs and one Tablespoon of agar agar powder we also Threw in two tablespoons of tapioca Starch and one half a cup of hot boiling

Water now we’re going to put on the top And blend till smooth you can see here Bunded up nicely and it is well Blended Now we’re going to pour the mixture into A small saucepan and turn on the heat And heat it up just until it starts Bubbling you can see here we’re just Kind of mixing it together constantly Just so it doesn’t stick once it starts Bubbling we’re going to turn the heat Down to low and let it simmer for about 10 minutes if it doesn’t get thick after 10 minutes then you need to add some More agar agar water you can see here it Is starting to thicken up and now right Here it’s really thick as we move the Spoon through the mixture it starts Trailing this right here is ready to go Into some molds all right so now I’ve Got a small spring foam pan and I’m just Going to pour half this mixture into one Of these uh spring foam pans and then Half into another I’m going to try and Get two out of it so that one there is Looking good and I’m just doing the same Thing with the other one then I’m going To take both of them and toss them in The fridge for at least four hours I let Them sit overnight the next day I just Undid the catch on the springform pan And you can see that it just kind of Pulled away from the side so that was Really nice and then it still seemed a Little thin so I used a spatula just to

Go along the bottom to lift this cheese Wheel up and you can see here it did Come off pretty cleanly now I’m just Rolling this little cheese wheel through Some spices here I’ve got a smoked Paprika and some Italian spices and that Worked out pretty well gave it a nice Little rind and you can see here the Finished product it actually looks Really nice it’s a great looking little Cheese wheel and it’s in a really nice Spreading texture this is going to make A nice addition to our Chuck artery Board for the sweet potato roasted red Pepper cheese we’re going to start with A high speed blender and add one cup of Water then it’s one cup of oats one cup Of cooked sweet potato one whole roasted Red pepper one half a cup of nutritional Yeast one tablespoon of smoked paprika Two and a half teaspoons of sea salt one Half a teaspoon of white pepper one Teaspoon of onion powder one teaspoon of Garlic powder two tablespoons of lemon Juice and then we’re adding a cup of Water over the top now it’s time to take It to the blender and blend for at least One minute till it’s nice and smooth you Can see here it’s looking good we’ll set That aside for a minute and we’ll start Working on our thickening mixture in a Medium saucepan we’re adding 1 3 cups of Water and two and a half tablespoons of Agar agar powder we’re going to turn on

The heat to medium and stir all this to Combine it and we’re going to keep Stirring this until it comes to a boil Once it comes to a boil we’re going to Turn down the heat to low and we’re Going to keep stirring and let it simmer It has to get really thick you can see Here that’s thickening right it’s got to Get really thick almost like molasses Once you’ve got that ready you could Take that mixture and pour it right into The blender with the sweet potato Mixture and make sure you get all that In there that’s your thickening agent Right there then you want to blend it on The blender stand well until it’s all Combined if we take off the cover here You can see it looks nice and combined And we’ll just move it around a little Bit and you can see that it’s all smooth This is ready to go now we’ve got a few Different types of molds here we’ve got The two springform pans we’ve also got Some little star molds I’ll be honest With you so it’s really rough to get Them out of these little star molds this Spring foam pans they really work the Best but it was fun having them in these Little molds if you have those little Molds they might be fun to do silicone Probably would have been a lot better For those shapes versus the star there’s Just no way to get them out of the star Mold and we just kept pouring them in

Until we filled up every little mold in The house this made a lot more cheese Mixture than the the other recipe did And now these are ready to go in the Fridge I let these cool in the fridge Overnight so now it’s game day and I Gotta get this cheese out of this mold Here so we’re just again undoing the Little latch on the springform pan and This one held together a lot nicer it Really kept its shape well I didn’t even Need a spatula to get the bottom off I Just toss it upside down on a plate and Pulled off the top you can see here it Looks really good I’ve got some paprika Here and I’m just gonna sprinkle it over The top just to give it a little extra Contrast and color and you can see there It is this is a beautiful looking block Of cheese I really feel like this was The star out of both these uh cheese Blocks that deep orange color is kind of Odd but really it’s I mean it’s Absolutely beautiful this is going to Look perfect on a charcuterie board so Tell me you put these together what’s Going on Yes so my thinking is that uh finding a Bull for a different height on the board Um this particular board where uh having Hummus so we have some pita bread that We got from Trader Joe’s oil free yeah This is the oil-free Peter bread and we Just kind of cut this up with a pizza

Cutter and little triangles for for Dipping so it’s kind of laying these out Right it looks like a lot of pita bread But I feel like hummus is the thing Everyone eats with the pita bread right Yeah and cut them in the pie shapes Encourages people to grab a little slice It looks accessible Um here I found we had some broccoli in The fridge I cut up into halves I think The whole ones are just a little bit too Much right and too much of a commitment Yeah so and I’m just applying basic Principles of color contrast so red Looks brighter next to Green or green is Brightened up next to Red so I didn’t do that in the fridge Lex loves Those mini uh bell peppers so that’s I Cut those in half Uh deseeded them and they they work nice As far as color right we had some green Beans and I just thought that I don’t Know we’ve been on a green bean kick for The last couple weeks so uh put that in We had a a cutter for some carrots and Then some celery just trimmed up It’s kind of nice I mean some people Love this I like it Um other people don’t but I feel it’s Necessary to have it on there with Hummus Um we also had a rainbow color of Radishes and I feel like radish is a un Uh not utilized enough anyway so I cut

Those in half and cut the ends off these Are really nice as well it’s a different Texture it’s a different Chew in your Mouth Um I really like that and so this came In a light red dark red and yellow so I Thought that was nice to put on okay so We talked about having different heights On the board right so I’ve got a little Bit smaller this is where I wanted to Come in with some nuts Um not everyone has this but sometimes Just to have a few sort of nice here’s Some Brazil nuts this is something you Know it’s nice to have a few of every Day for selenium So I felt like we’ve got two quality Nuts here that people like or don’t Always have so I need uh things that Interest them some people are going to Eat yeah yeah it’s one of the reasons We’re creating You know a couple boards here going Somewhere Um So anyway this is nice those pretzels Are oil free those thin flat pretzels Yep I think that’s there’s flour and Water and it’s pretty basic uh this is The uh the world’s best hummus the hch High carb Hannah version uh the secret Of this is there’s no oil right the Tahini’s in there but there’s no oil but You have to blend it for like two

Minutes in a high speed blender like you Have to blend the heck out of it right Yeah and for us I think this is a treat Oh yeah uh because it does have the Tahini and we normally don’t Make this on regularly but yeah this Comes out so nice I don’t know it came Out amazing and we normally don’t need The the nuts and all that stuff in any Type of excess so uh this all was a Treat but this hummus is is better than Anything you can buy at the store yeah Now the paprika I just uh sprinkled on Here was more for color contrast and and You can see here I mean this is an Absolutely beautiful little hummus board Right so uh you know this was this was One of the boards that we took to NeNe’s House for the for the party uh and I can Tell you I came back empty there was Nothing on it yeah like when I took it Back so Uh again the best thing was the broccoli Was cut down okay so all right so now We’re doing our charcuterie-ish board Right uh you know uh cheeses and uh Fruits and all that right yes so here You are trying to find just the right Spot for the grapes right yeah in my Mind Um I like a little sweet to break up the Flavor when there’s so much Savory and The cheeses that we made are Savory yeah For sure so I kind of went to the

Fridges you know just looked at what we Had and here we’ve got the uh the sweet Potato cheese that we just made uh and There’s a funny story about that and I’ll tell you when I after this is all Right then we’ve got the almond cheese That we made right there Um you know uh they really made the Board look good and uh we’ve got Mary’s Crackers it’s held upside down but Um those Mary’s crackers are oil free And they were amazing right the word They could hold their own with the Homemade cheese or whatever texture Softer heart cheese oh man I really love The original so I’m gonna be honest I Love the original so I love the original It’s not more than another flavor but we Bought a flavor this week that was just Amazing so I mean try them all they’re All really good yeah but I thought the Original was right on the money right Yeah if I could recommend one of them But it was nice to have a variety of Crackers oh yeah without oil no yeah Yeah um there’s still a lot of crackers A lot of oil like there’s really no Choice right this is it I think I’ve Read every label and exhausted from it Yeah Um so we’re kind of figuring out where To place things are again going for some Different heights here Um

You know now let’s talk about the meats Oh all right okay this ham particular by Use is actually very low in fat it’s It’s starch solution compatible actually Uh we don’t normally eat it because we Don’t eat meat-ish things or process Like yeah so we just keep it simple Right but this is for Lex so I had some Of those I just got the idea of like if We’re doing Savory with all these Flavors Um I know a couple of the kids uh one of Our friends loves pickled jalapenos yeah So we put that off to the side and now We’re adding this side some olives again Just a compliment those Savory flavors We’ve got going on with Um The I guess the plant-based meat slices Like the crackers and you know the Cheeses and stuff so I thought this went Well you know the kids already their Eyes lit up when they saw that we made Homemade cheese and they couldn’t wait To try it and that’s the the eaves uh Brand veggie ham yeah really it’s it’s I Don’t it’s got one gram of fat if that Uh and it’s I don’t think there’s any Oil in it right yeah yeah I mean I have to check but I don’t think There is so we’ve you we threw that Almond and all those went like people Loved the idea of having a little cheese With a little veggie ham and the

Crackers right if it was just for us we Would just love to ham up I don’t really Care but you know it’s it’s on a gun to An Asian supermarket and I had bought All this time so we had extra time Hanging around in the fridge so I Utilized that just to kind of add into The Savory idea Mediterranean idea Um and it worked nicely here it makes it More organic people saw this and and Loved it yeah I think it’s pretty Classic to bring in a pair I just uh we Put some chopped up dates yeah we’re Just trying to fill in Halls with dump And chop the dates and some pecans yeah Just those little tastes of sweetness Now with some pecans it’s a different Nut than what we had used before and the Pear is dipped in in lemon right so it Doesn’t turn brown right I did that yeah Now again no one’s going to overload on Fat from these pecans like all the People that were there they’re having One or two so I feel like this was sort Of a nice addition guys Um and I mean you can see right there This is a beautiful little vegan Chocolate board the worst thing on it is The meat the plant-based meats and Literally like there’s no oil and then One gram of fat like they’re minimally Processed yeah so for game day and yeah The diverse population yeah this one This satisfied so many different tastes

This allowed us and Nene’s family to eat This all right yeah which was great Now it was you know it’s at Nina’s house So everything was vegan but there were People there who aren’t really Interested in eating vegan that could Eat this stuff right and it was fun for Those who hadn’t been exposed to this Type of cooking and so much was homemade Right yeah like yeah it was really fun So this I love this I think you did a Beautiful job in this tray and uh Everyone at the party loved it every Piece of it went there was nothing left So you can see I feel like this was kind Of easy to make yeah but the impact it Had and the fun if I think it brought to People’s eyes was worth it all right so Now we’re at NeNe’s House and there she Is right there and you can see she’s put Out a whole tray of a whole table Of she’s got some bean dip she’s Got some uh cauliflower bites she’s got Seven layered seven layer dip a salad There’s some more spread she made all Those tortilla chips herself every Single one of them and then there’s our Trays we also had a tray of processed Stuff too that was vegan cheeses and all That cultured casket cheeses um yeah It’s more for the kids yeah they loved It at Christmas all right so uh first of All before we go any further Um when I got to NeNe’s House right

She’s like oh where did you get the Recipes for this cheese and I said well It’s from Anya from cooking with plants She’s like oh my gosh I gotta show you Something so she disappears in the back And then she comes back and she’s Holding up Anya’s cookbook right which I Didn’t know she had but I guess she does Right and uh cooking with plants and on The cover of the cookbook of these two Cheeses right right on the cover she’s Like I’ve been meaning he’s like I’ve Been wanting to make these forever out Of this cookbook I’m like well here they Are right so there’s a picture right Here of me and Nene holding this Cookbook up right we’re like oh my God Oh my God someone take our picture uh so I mean I know Anya has so many Subscribers I doubt she watches us but On you if you are watching it was a a Very crazy wonderful moment where you Both just paid you homage uh and we Absolutely we all love you right all Right so uh one of the things here’s Some things that we encounter during This recipe is that maybe we would Change first of all uh every time Anya’s In her recipes and her videos says a cup She’s talking about a metric cup not a U.S Cup right we of course are using a US cup and I didn’t make any of the Conversions and I felt that some of the Tastes were way too strong right now we

All have different tastes and all that For instance the herb and almond the Herb almond cheese uh I felt like that Was way too Italian seasoning which is What I use if I were to do that again And I would do it again I would do like A garlic herb cheese right like some Garlic flavors yeah and then I don’t Know it’s a little bit of basil and Parsley or something don’t you think Yeah because all that other stuff was Really really strong thank you thanks uh And I put her measurements in but of Course her measurements are less over There or maybe they’re more I don’t know But they’re different so I don’t have The right measurement so if you make These recipes you need to use the Metro Cup she’s using Um so I would have done that right the Same thing with a sweet potato and red Pepper cheese that cheese held together Beautifully that’s right Um but it was really strong in Red Pepper and sweet potatoes like I don’t Know I would have cut those down a Little bit and it made a lot too right So I kind of think we should make these If you’re gonna make them for a crowd Maybe make them the week before and test It and see what you think but as far as Looking at what how it looked on that Platter it was amazing and let me just Tell you every bit of that went right

Yeah like there was nothing left like it May have been too strong for us but People smear that on crackers but those Little like meats and all that and and Hey yeah I think there’s so many Different flavors and and we showed that In there sweet and savory yeah versus But but it’s a hit and people can make And pick and they’re not committed to Something they love that right so for That I you know I would be careful that Uh in the video we use the egg powder or The the flakes the agar agar Flakes and We grind them up into powder agar is Made from seaweed is it and it’s a Thickening agent and it’s what’s used to Create the block texture Um if you buy the powder which we Couldn’t get here it’s different than Buying the flakes in in on this video She talks about how if you’re using the Flakes you need to use like five times As much flakes we ground the flakes up Into powder it seemed to really work Well in the sweet potato one but it Didn’t work so well in the Almond herb One right so maybe we probably needed a Little put a little more in there I Still thought it turned out great but it Held together so it did hold together But I wanted you to know that just so There’s Flakes and powder so you got to Figure out which one you’re using in her Recipe she talks about that all right so

I thought I mean that was we had we got A Super Bowl at Mimi’s house every year It’s always a good deal uh the kids love It right and uh Um you know this this time that we Guessed and all that we had non-vegan People they loved all the food right and You saw all that food Nene had laid out Like it’s always like a buffet of food Yeah I didn’t think we um missed out on Anything Um nor did anyone else but I think the Purpose of this video was to inspire you We showed you what sort of we did but Often we sold to see posts like hey I’m Going to a party what do I bring those Vegan non-vegans Um no I find that when we go to parties People are really interested in finding Tasting an alternative Um Pieces right so that’s what I was Excited to share with you in this video Yeah so that’s our video for today uh Two beautiful uh boards one a Charcuterie board and one the hummus That HC I mean I think a lot of people Make hch’s hummus the best hummus in the World is the video it is absolutely Amazing and even anybody was like why is This so silky smooth well like you just Have to blend the heck out I think we Yeah and I think we don’t usually use Tahini and on special occasions all
