Ingredients
- 4 oz.
fresh goat cheese, at room temperature
- 4 oz.
cream cheese, at room temperature
- 1/4 c.
ricotta
- 2 tbsp.
fresh chives, finely chopped
- 2 tbsp.
fresh flat-leaf parsley, finely chopped
- 1 tsp.
lemon zest

Kosher salt and pepper

Sliced almonds, dried black beans, and capers, for decorating
Directions

- Step 1In large bowl, mix goat cheese, cream cheese, ricotta, chives, parsley, lemon zest, and ¼ teaspoon each salt and pepper until well combined.
- Step 2Divide mixture in half and transfer each half to piece of plastic wrap. Use plastic (or damp hands) to form each cheese ball into mounded oval shape, with 1 end more pointed and defined to resemble the head. Lightly cover and transfer to plate or small tray. Refrigerate until firm, 1 to 2 hours. Carefully peel off plastic and transfer cheese to serving plate.
- Step 3Before serving, press rows of sliced almonds on cheese balls to resemble a hedgehog. Press on beans and capers for eyes and nose.
On the nose: For a convincing (and cute!) hedgehog, pinch the cheese at the tip of the mound to create a distinct snout.
