Alison Alexander’s corn, basil and goat’s cheese tart will make you feel like you’re eating like a royal, but it’s got a twist that makes the most of Queensland’s seasonal produce.

  1. 1.Pre-heat oven to 170ºC.  Place tart shell on oven tray.
  2. 2.Par cook corn either in boiling salted water or the . Cut the corn off the cobs and place in a bowl with the pepper, basil and most of the goat’s cheese, leaving about 5 slices aside. Gently stir together.
  3. 3.In another bowl, beat the eggs and cream until mixed then pour this mixture into the corn and stir to combine.
  4. 4.Spread the tapenade over the base of the tart shell then pour over the corn mixture. Dot the top with the reserved goat’s cheese slices.
  5. 5.Bake in the oven for about 35 minutes or until the top has risen and is golden. Remove from the oven and rest for 20 minutes (or until cooled to room temperature) before cutting.
