John and Lisa are feeling celebratory in their Christmas Kitchen – with a menu perfect for a special night in. They start with a recipe for cheat’s Blinis and a variety of toppings from tapenade to pickled cucumber.
Cheat’s Blinis with x3 Different Toppings
Ingredients
Ingredients – Cheat’s blinis250g self-raising flour1/4 teaspoon bicarbonate of soda10g caster sugar1 egg280ml milk30g butter, melted
Ingredients – Cream cheese and smoked salmon1 tub of cream cheese1 bunch of chives, choppedSmoked salmonSalt and pepper
Ingredients – Tapenade 250g pitted black olives, drained40g large salted capers, drained1 clove of garlic, sliced1 tbsp olive oil30g anchovies1 tbsp brandy1 handful of parsley, chopped
Ingredients – Pickled cucumber3 tbsp white wine vinegar3 tbsp of caster sugar1 tsp of sea salt 1/2 cucumber, peeled in alternating strips and slice on an angle2 red chillies, finely chopped1 garlic clove, sliced1 banana shallot, finely slicedPeppered cream cheese, to serve
Method
Method – cheat’s blinis1. Sift the flour and bicarb together into a medium bowl and then stir in the sugar. Make a well in the centre. 2. In a separate jug, crack in the egg and add the melted butter and milk. Whisk the mixture together. 3. Whisk the wet ingredients into the dry and rest, out of the fridge, for 15 minutes.4. Heat a large, non-stick frying pan on a medium heat.Brush with butter or oil. 5. Working in batches, drop tablespoons of batter into the pan, allowing room for spreading.6. Cook 1-2 minutes, until bubbles appear on the surface. 7. Turn and cook 1 minute further, until golden.
Method – cream cheese and smoked salmon1. Stir the chives through the cream cheese and season to taste.2. Spread onto the blinis and top with smoked salmon.
Method – tapenade1. Add all ingredients except for the brandy and parsley to a food processor and blend to desired consistency. 2. At the last minute, add the brandy. 3. Season as necessary and fold in the chopped…
