There is no shortage of great sports to watch on TV these days, whether you are into football, basketball, tennis, hockey, or all of the above, one thing we can all agree on is, the best part of watching sports on TV is the snacks. Don’t you agree? Here is a funky dip to add to your game day spread. Most of the alcohol cooks off in the cooking process, but you could use non alcoholic beer for the same flavour if needed.

Game day beer cheese
2 tbsp butter
1 small shallot diced
2 tbsp all purpose flour
1 cup beer (preferably something on the lighter side)
1 cup aged cheddar cheese shredded
1 cup Gruyère cheese shredded
1 tsp Worcestershire
1/2 tsp dry mustard
Chives and a sprinkle of paprika for garnish
Assorted crackers and pretzels for dipping
Celery sticks for good measure
Directions
- In a medium saucepan melt the butter.
- Add shallots and sauté for about 4 mins over medium low heat, until softened.
- Add the flour and cook for an additional minute.
- Slowly add the beer while whisking, continue to whisk and thicken for 5 minutes.
- Add the shredded cheese a handful at a time, while continuing to stir.
- Once the cheese is incorporated, add Worcestershire, and dry mustard.
- Pour into serving dish, and top with chopped chives and a sprinkle of paprika.
